Because Atmosphere 0.0 Pils is brewed in Germany it's brewed according to the Reinheitsgebot -- the German Beer Purity Law created by Bavarian Duke Wilhelm IV in 1516. The law stipulates how a beer can be made and what ingredients can be used.
Atmosphere 0.0 Pils is first brewed as a fully fermented alcoholic Pilsner using just hops, hops extract, malt barley, yeast and spring water. There are no flavors, preservatives, clarifying or foaming agents added.
To remove the alcohol the beer is then passed through a state-of-the-art de-alcoholization system that uses a process called vacuum distillation to remove the alcohol. The beer is brought up to a temperature in a vacuum where the beer doesn't boil (keeping with the Reinheitsgebot) but the alcohol evaporates.
The non-alcoholic beer is then quickly canned and passed through tunnel pasteurization equipment to ensure that pathogens can't form and to prevent any future re-fermentation.
